Chef, Hats off to you, quite an undertaking, will this be your residence or a B&B? We have been visiting Piedmonte since the early Eighties, always in Nov. for the truffles and after the last German tourist left the building! I immigrated from Holland in '71 and build a meat Co. supplying the top French, Italian, Spanish and US chefs in the greater Washington DC area.Since the sale and subsequent retirement in 2000 we have been raising Bison on our farm in N VA.
